Pin this A bold and inventive fusion dish that layers ramen noodles, spicy ground pork, tangy tomato sauce, and creamy cheese for a comforting, flavor-packed meal.
I first made Spicy Ramen Lasagna for a potluck party and everyone asked for seconds because of its rich layers and spicy twist.

- Ricotta Cheese: 250 g
- Egg: 1 large
- Mozzarella Cheese: 100 g, shredded
- Parmesan Cheese: 50 g, grated
- Green Onions: 2, thinly sliced (optional, for garnish)
Instructions
- Preheat Oven:
- Preheat oven to 180°C (350°F).
- Prepare Noodles:
- Cook ramen noodles in boiling water for 2 minutes less than package instructions. Drain and set aside.
- Sauté Aromatics:
- Heat vegetable oil in a large skillet over medium heat. Add onion, garlic, and ginger. Sauté until fragrant and translucent, about 3 minutes.
- Cook Meat:
- Add ground pork. Cook until browned, breaking up the meat with a spoon.
- Make Meat Sauce:
- Stir in gochujang, red pepper flakes, crushed tomatoes, soy sauce, rice vinegar, and sugar. Season with salt and pepper. Simmer for 10 minutes until slightly thickened.
- Mix Cheese Layer:
- In a bowl, mix ricotta cheese, egg, half the mozzarella, and half the parmesan until combined.
- Layer Lasagna:
- In a large baking dish (about 22x30 cm), spread thin layer of meat sauce on the bottom.
- Add Noodle Layer:
- Arrange a layer of ramen noodles (about one pack per layer) to fit the dish.
- Add Ricotta Mixture:
- Spread a third of ricotta mixture over noodles, then top with a third of meat sauce. Repeat layers twice more, finishing with the remaining meat sauce.
- Top with Cheese:
- Sprinkle remaining mozzarella and parmesan over the top.
- Bake Lasagna:
- Cover with foil and bake for 20 minutes. Remove foil and bake for another 10–15 minutes until cheese is bubbling and lightly golden.
- Rest and Garnish:
- Let stand for 10 minutes before slicing. Garnish with green onions if desired.

Frequently Asked Recipe Questions
- → Can I use different noodles?
Yes, while ramen noodles provide a distinct texture, you can use other types like instant wheat noodles or fresh egg noodles. Make sure to slightly undercook them before layering to prevent softness.
- → What protein alternatives work for the meat sauce?
Ground chicken, beef, or turkey all work well. Choose options based on your taste and dietary needs, adjusting seasonings if desired.
- → How can I make this dish spicier?
Increase the amount of gochujang or red pepper flakes, or drizzle finished portions with chili oil for an extra kick as desired.
- → Can vegetables be added between layers?
Absolutely! Sautéed mushrooms, spinach, or bell peppers can be layered with the noodles and meat sauce for more nutrients and flavor.
- → What cheeses provide the best melt and flavor?
Mozzarella offers smooth melt, ricotta adds creaminess, and parmesan delivers sharp, savory depth. Combined, they balance richness with stretch and bite.
- → Are there dish pairing suggestions?
This layered fusion entrée pairs excellently with a crisp lager or lightly chilled red wine to complement the savory and spicy notes.
