Ingredients

  • Dry Ingredients: 2 1/4 cups (280 g) all-purpose flour, 2 tsp ground ginger, 1 tsp ground cinnamon, 1/4 tsp ground cloves, 1/4 tsp ground nutmeg, 1/2 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp fine sea salt, 2 tbsp instant espresso powder
  • Wet Ingredients: 3/4 cup (170 g) unsalted butter softened, 1 cup (200 g) packed brown sugar, 1/4 cup (60 ml) molasses, 1 large egg, 1 tsp pure vanilla extract
  • For Rolling: 1/4 cup (50 g) granulated sugar

Instructions

Step 1:
Preheat oven to 350°F (175°C) Line two baking sheets with parchment paper
Step 2:
In a medium bowl whisk together flour ginger cinnamon cloves nutmeg baking soda baking powder salt and espresso powder
Step 3:
In a large bowl cream the softened butter and brown sugar until light and fluffy about 2 3 minutes
Step 4:
Beat in the molasses egg and vanilla extract until well combined
Step 5:
Gradually add the dry ingredients to the wet mixture mixing just until incorporated
Step 6:
Scoop tablespoon-sized portions of dough and roll into balls Roll each ball in granulated sugar to coat
Step 7:
Place dough balls 2 inches apart on prepared baking sheets
Step 8:
Bake for 9-11 minutes until edges are set and tops are crackled
Step 9:
Cool on baking sheets for 5 minutes then transfer to a wire rack to cool completely
