# Method:
01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together all-purpose flour, baking powder, and salt until evenly combined.
03 - In a large mixing bowl, use an electric mixer to beat unsalted butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
04 - Blend in the egg and pure vanilla extract until the mixture is smooth.
05 - Gradually mix the flour blend into the wet mixture, scraping down the sides as needed, until a soft dough forms.
06 - Divide the dough into two portions. Wrap each in plastic wrap and refrigerate for at least 30 minutes.
07 - Roll out each chilled dough half on a lightly floured surface to 1/4 inch thickness. Cut rounds or holiday shapes using 2-inch cookie cutters.
08 - Place cut cookies 1 inch apart on prepared baking sheets.
09 - Bake for 10 to 12 minutes, until edges are just golden. Cool on sheets for 5 minutes, then move to a wire rack to cool completely.
10 - Beat softened butter until creamy, then gradually mix in powdered sugar, vanilla extract, and 1 tablespoon of milk or cream. Beat until smooth and fluffy, adding additional milk as needed. Tint with food coloring if desired.
11 - Spread or pipe approximately 1 tablespoon of filling onto the flat side of half the cookies. Place matching cookies on top to sandwich.
12 - Roll the edges of each sandwich cookie in festive sprinkles to finish.
