# Method:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together all-purpose flour, baking powder, and salt until evenly combined.
03 - In a large mixing bowl, use an electric mixer to beat unsalted butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
04 - Blend in the egg and pure vanilla extract until the mixture is smooth.
05 - Gradually mix the flour blend into the wet mixture, scraping down the sides as needed, until a soft dough forms.
06 - Divide the dough into two portions. Wrap each in plastic wrap and refrigerate for at least 30 minutes.
07 - Roll out each chilled dough half on a lightly floured surface to 1/4 inch thickness. Cut rounds or holiday shapes using 2-inch cookie cutters.
08 - Place cut cookies 1 inch apart on prepared baking sheets.
