A luxurious chocolate bark inspired by the flavors of Dubai combining rich dark chocolate with roasted nuts dried fruits and a hint of exotic spice for an irresistible treat

I enjoy preparing this bark when I want a quick elegant dessert that impresses guests and satisfies a sweet craving

Ingredients

  • Chocolate: 300 g high-quality dark chocolate (at least 60% cocoa) chopped
  • Nuts & Seeds: 50 g roasted pistachios roughly chopped 50 g roasted almonds roughly chopped
  • Dried Fruits: 40 g dried apricots diced 30 g dried figs diced 20 g golden raisins
  • Spices & Garnishes: 1/2 tsp ground cardamom 1/4 tsp sea salt flakes Edible gold leaf or rose petals (optional for garnish)

Instructions

Step 1:
Line a baking sheet with parchment paper
Step 2:
Melt the dark chocolate in a heatproof bowl over a pan of simmering water (double boiler) stirring until smooth Remove from heat
Step 3:
Stir in the ground cardamom
Step 4:
Pour the melted chocolate onto the prepared baking sheet and spread into a 1/4-inch (0.5 cm) thick rectangle using a spatula
Step 5:
Evenly sprinkle the chopped pistachios almonds dried apricots figs and raisins over the chocolate
Step 6:
Lightly press the toppings into the chocolate to help them adhere
Step 7:
Sprinkle with sea salt flakes and if using edible gold leaf or rose petals
Step 8:
Refrigerate for at least 45 minutes or until completely set
Step 9:
Break or cut into pieces and store in an airtight container at cool room temperature or in the fridge
