13 - 2 lbs russet potatoes, peeled and cut into fries
14 - 2 tbsp vegetable oil

# Method:
01 - Set oven to 425°F and line a baking sheet with parchment paper.
02 - Toss the cut potatoes with vegetable oil, salt, paprika, and black pepper. Arrange fries evenly on the baking sheet and bake for 25 to 30 minutes, turning once halfway through, until golden and crisp.
03 - Pat the steak cubes dry using paper towels to remove moisture.
04 - Mix Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, oregano, black pepper, and salt in a bowl. Add steak cubes and toss until fully coated.
05 - Warm olive oil in a large cast-iron skillet over medium-high heat.
06 - Place steak pieces in a single layer and sear for 1 to 2 minutes per side until browned and cooked to desired doneness. Work in batches if necessary.
07 - Incorporate butter into the skillet and toss the steak bites until they appear glossy and well coated.
