Chewy gummies, freeze-dried candy, and wholesome oats combine for a flavorful bar ideal for playful snacking.
# What You'll Need:
→ Snack Bar Base
01 - 2 cups rolled oats
02 - 1/2 cup almond butter or peanut butter
03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt
→ Homemade Gummies
07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 2–3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, lightly crushed
11 - 1 cup freeze-dried candy, crushed or chopped
# Method:
01 - Line an 8x8-inch baking pan with parchment paper to ensure easy removal of bars.
02 - In a large bowl, thoroughly combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt. Firmly press the mixture into the prepared pan, forming an even layer. Refrigerate while making the gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle unflavored gelatin evenly over the surface and allow to bloom for 5 minutes. Gently heat over low, stirring until gelatin fully dissolves. Incorporate honey, then pour the mixture into a parchment-lined small baking dish. Transfer to refrigerator and chill for 45 to 60 minutes, until set.
04 - Once the gummies have set, slice them into small, uniform cubes.
05 - Remove oat base from refrigerator. Distribute gummy cubes, freeze-dried fruit, and freeze-dried candy evenly over the surface. Press toppings gently into the base to secure.
06 - Place the assembled pan back in the refrigerator for 10 to 15 minutes to allow toppings to adhere and the bars to firm.
07 - Lift the bar mixture out of the pan using the edges of the parchment paper. Slice into twelve equal bars.
