# Method:
01 - Combine heavy cream and granulated sugar in a medium saucepan over medium heat. Stir constantly until sugar is fully dissolved and mixture comes just to a simmer.
02 - Add grated lemon zest to the pan, stirring for 1 minute to release aromas. Remove from heat.
03 - Pour in fresh lemon juice and gently stir until the mixture thickens slightly.
04 - Strain mixture through a fine mesh sieve into serving glasses or ramekins. Cool to room temperature, then refrigerate for at least 4 hours or until set.
05 - Garnish each portion with extra lemon zest or berries if desired, and serve chilled.
